Can an individual purchase 1 additional leg for a 10 foot table? I am very pleased with the set I purchased but think it needs one more support with

As a journeyman union carpenter, adding another leg in the center of a 10’ table is a good idea. The best way to ensure it’s even is to flip the table over on the floor or a flat clean surface and attach the support. This should remove any dip in the table.

Are these legs suitable for outdoor use or will it rust without some sort of coating on it?

They would rust. I am not sure I would use outside.

The screw holes don’t appear to be slotted so I’m worried about the wood top splitting when it expands/contracts - comments?

So…the wood doesn’t come with it. This is just the metal legs, I didn’t slot the wood holes and I used aspen 3/4”x24”x4’ from Menards for the top. It has been over two years in northern Midwest (high humidity summers/very cold winters) weather and held up without needing slotting. The metal legs are excellent quality and very easy to put together and balance. With stood a moving company perfectly (don’t mind the dust 😂).

Can these legs be used with a stone top around 200lbs?

I personally would not use anything over 100 lbs on these legs.
