Just what is direct heat??????They say to 500 deg. but what happens after? Mat disintegrates, food gets poisoned, or what.I have run my Weber at 450 and had great success because I have been careful. But my friend does not have an internal temp gage [is that enough or is it at grill level] and is not careful. What can happen? To him or our families if we eat overheated mat food?Not trying to be negative but careful. OK.
