How about the audio quality while listening to music with this headphone and charging adapter?

I found no degradation in sound quality. Between my last phone and this one with the adapter with the same wired headsets. Also sounds as good as my Bluetooth headsets. I have not noticed any hissing or humming.

Will listening to music through this usb c to 3.5mm and charging adapter affect charging speed?

Certainly not, it supports fast charging. I really like this adapter! I can watch the movie while charging.

Has anyone confirmed that this product works with the pixel 7? my old splitter worked with my old pixel 5, but it does not work with my pixel 7.

Works with my Galaxy Fold 4 ,and Galaxy s22 ultra. I am sure it will work.

Does this work in a car? I know these require a codec or something special to work in cars

I am not sure about working in a car. This is a USB-C not the type that generally is in a car. Both the input and output are USB-C so as long as you have a USB-C input in your car it should work. I use it for my iPad mini not my car.
