You are mistaking carbohydrates and glycemic index as being one and the same thing when in fact nothing can be further from the truth. Glycemic index is actually a measure of how quickly a particular carbohydrate or food will raise blood glucose levels. The glycemic index generally rates foods from low to high GI, with high GI causing very quick release of blood glucose into the system. High glycemic index foods are typically simple carbohydrates, and those include things such as many sweets, processed foods, sugar sodas, processed grains (white bread, most rice) etc. Dietitians and endocrinologists recommend choosing smarter carbs, and the glycemic index is a very helpful tool in doing so. Low GI foods, like complex carbs (“smarter” carbs), won't raise your blood sugar very quickly. Examples of these include oatmeal, pasta, sweet potatoes, fruits, and carrots. So 1/4 cup of traditional long grain, white rice may have 38 carbs, as would a similar size serving of pasta. But the Glycemic index of the two foods is strikingly different (72 for the plain white rice versus 42 for the pasta). So it isn't the carbohydrate that's gonna kill you, it's the blood sugar spikes from specific kinds of simple carbohydrates that will kill you

How is this a low glycemic if there is absolutely no fiber in it with only 11% protein per serving?

We are growing a variety from the LSU Rice Research station that has 1.4 times more protein than other long grain varieties that grow in the southern rice growing region. Our rice still has the same amount of carbs but the higher protein changes the way the carbs in rice affect your body.
Because of the carbs, long grain white rice typically scores 60-70 on the glycemic index. We had our rice scored at an independent lab, Inquis Clinical Research, and the score came back at 41. We have a much lower score and fall in the low range on the glycemic index vs. the high range that all other rice fall into.
