Are all of these seeds heirloom?

They are all heirlooms except the peppermint and the peas. The seed packet has a stamp on the front if they are heirloom seeds.

Will these plants yield seeds that produce plants true to the original?

Seeds produced by heirloom varieties produce plants that resemble the parent plant.

What is the shelf life? What are the seeds packaged in?

Not sure of the shelf life, but they are in typical paper envelopes. Some of the packages I received had stickers with newer dates covering the dates on the original package. Most of them germinated fine. I had an issue with all of the beans. But that could be user error, as I am not used to gardening in the zone I live in now. I have yet to plant any of the greens. Waiting for cooler temps.
