The next two were restaurant quality steaks. Fantastic! The best steaks that I have ever enjoyed at home. The reason for the first steak not being quite as good was lack of attention to detail in following the directions, (pan could have been hotter and too much oil was used) This book produced the greatest satisfaction for me than any other cook I've ever purchased.

Enjoyable Read
Although I enjoyed reading this book it was not what I expected. It was more about the author’s life as a chef than how to cook steaks. I ordered the book because Aaron Franklin says Tesar cooks great steaks. It did have some interesting recipes though.

Enjoyed Chef Tesra's stories of his career blended with great advise on selecting equipment, meat and proven techniques. This man knows and enjoys his business.

Franklin's is the better of the two if you really want to learn how to dry age beef and cook it.

A great cooking journey for carnivores!
Excellent, clear and precise recipes. Wonderful narrative and story line. I do a great deal of meat cooking....grilling, BBQ, smoking, slow cooking, etc and this great book has a place in my 200 book library! Definitely learned some new techniques and cooking strategies. You will need a good cast iron skillet!

Great read amazing recipes just because it’s about steak don’t take it for granted .. it’s has real amazing recipes and lots of great techniques and real facts about the beef business

We have tried two recipes so far and loved them. We live in an apartment and cannot use an outside gas grill. The steaks cooked in a cast iron skillet on the stovetop using the instructions in the book are as good as we use to have on our grill.
