The warmest setting is about 275F, so conceivably you could boil a pot of water containing several gallons. However, if somebody's having a baby, or this boiled water's for some other emergency, i'd advise a different method.

Has anyone tested with a thermometer to see if this keeps a consistant temperature once set?

Have not. Old keeep food covered however to keep it edible warm
