I used the whole egg powder in a cake mix which required 3 whole eggs. I mixed the egg powder into the dry cake mix so the lumps were blended in smoothly, then I added the liquid (water) and oil. The cake baked beautifully and was very delicious. Right now with the virus running rampant one cannot always have the fresh eggs needed. It worked very well. Thank you.

This is the second package I've ordered since the Pandemic began. I bought the first as an emergency backup, but I've found that they are perfect for baking, and I've even scrambled some. They are delicious and extremely convenient.

We purchased these to have in case we couldn't get out for eggs again. We already live in the middle of nowhere, and add in the pandemic precautions it just makes sense to get as much as we can shipped. Plus, we try to keep kosher and that can also be a challenge this far out there, but it is always nice to see certified products that fit our needs - like these! Finally got a chance to use the powdered eggs over Thanksgiving weekend and they really didn't seem any different than using fresh eggs for the scrambled eggs and other dishes we made. Color was slightly darker but that is about it (only slightly). The only gripe we have is that the packaging is not so great, and we had to repackage the product into another plastic bag so it wouldn't go all over the place. Would definitely buy again. Side note: Didn't realize the company was from Eliot, Maine, either when we first purchased. We used to live in Maine and Eliot is not far from family so we went through there often, so this was an extra fun surprise when using the powder over the holidays! Every little bit of an extra smile counts right now given all that is going on. Thank you, Modernist Pantry, for a great product and inducing some great memories while making our lives a little easier right now.

I just can't go to the store now like I did. Many people are staying home more, so we are not alone in this. I found myself running out of eggs most of all. I really did check out what to do about this before ordering this product. Tried them and found they work great, taste is good, mixing is good and it was well received at the breakfast table even. I ordered 10 packages for food disaster storage then noticed that these packages that have arrived expire in less than one year. They are NOT returnable? I had no idea. Now I am worried if they will go bad before I can use them. I feel pretty dumb right now.

which means in the one egg I put in my protein drink, I also put the pesticides, insecticide, fungicides, and herbicides sprayed on the corn, soybean and wheat (high!) used in conventional chicken feed. I looked it up and yikes! I threw it away. There is no "value for the money" when eating poisons. Now with microplastics, PSAs in everything, consumers must be very aware of what the ingredients are in our food and also follow any FDA warnings for recalls. 28 candies were just found to have higher than safe amounts of arsenic, and the CANDYMAKDERS REFUSE TO RECALL THESE CANDIES, EVEN THOUGH FDA considers them dangerous, particularly for children, an example of how oligarchies behave. when they have too much power in the marketplace. I will be more careful next time, especially given what i am learning about market control and consumer choices. I threw away my "dollar vote". beware.

Just like fresh Eggs great to have on hand

Ordered a second bag after trying the first. Made some fried rice with chicken and could barely tell the difference between powder and fresh eggs. Smell is horrendous when smelling the powder, but mixing it, cooking it turns out to smell and taste like the fresh ones. I am sealing the powder in small canning jars with oxygen absorbers. Should last a long time.
