I am sure it will work well. These work very well. As easy as drilling into wood.

Can I drill a shallow depth hole for an anchor, or do I have to drill all the way through the ceramic?

You can stop drilling whenever. If you want to drill all the way through, you can, or you can just create a shallow hole. It takes a while to drill all the way through ceramic, so you have lots of control on how deep you go.
