Review: Terrific! - I made my first made from scratch tortillas. They were simple to make, three ingredients and easy to roll out using parchment paper on both sides and a regular pastry roller. And they tasted fabulous!

My only downside is I expected the package to produce more tortillas, which is probably due to a lack of research on my part. Wish I had bought a larger package or a second one, will be re ordering!

**Q: Is this gluten free?**
A: This product does not say gluten free on the package. This means that it's not tested for the presence of gluten, AND packaged in the same facility as Bob's packages their wheat flours. If you have someone with a food allergy that could react, don't use this one. It looks like Bob's has discontinued their GF masa... :(

**Q: Non GMO?**
A: Yes, it is non-GMO.

**Q: Can i use this to make polenta?**
A: Not if you want it to taste like traditional polenta.  The texture and flavor will be different because the grind is different and because the ground corn in this is processed with lime.

**Q: is the corn treated with lye?**
A: No. The way that masa harina is prepared is by soaking with lime (the mineral, not the fruit). It's the limewater that breaks down the dried corn and gives the resulting pupusas, tamales, or tortillas their wonderful aroma. The process is called "nixtamalization." You can readily find more information about this process on the internet. Lye includes sodium hydroxide (NaOH). Limewater includes calcium hydroxide (CaOH).
