Does it all fold up so I could store it and my puzzle away?

No, you can only fold it up when there is no puzzle on it. I push mine, with a puzzle, under my sofa and just pull it out when I want to carry on.

Would this be ok for a easel

No, the board does not have an adhesive surface, on an easel the puzzle pieces would just slide off.

Can i use this on my knee to play cards,Patience for example

Somehow I'm not sure it would be stable enough to balance on knees, it is quite large, but not particularly thick. Absolutely fine moving a jigsaw from place to place holding each side.
