You're thinking of the USA spec. This isn't pure Saltpetre, it is the EU recognised blend of Salt, E250 and E252 that, when combined, form Prague Powder #2 **Q: Iā€™m about to trying making my own corned beef but Iā€™m unsure which curing salt to choose Prague 1 or 2 or a completely different curing salt.** A: Prague 1 and 2 are used to keep the colour in the cured meat from going an unappetising grey. It used to be sulfate of potash which is used in explosives and now can no longer be bought easily. I don't think 1 or two make much difference. I think Prague 2 has sodium nitrate and nitrite. Prague 1 has sodium nitrate only. I hope I have in some way answered your question.
