With ps4 and mixamp pro do i need any extra cables to hear everything and chat to other players.

there are 2 cables in te box. one of them split in two for headphones and mic (pc), the other is single (combined sound and mic) and it looks like it is designed for consoles

I own Astro gaming's Mixamp Pro, How do I go about setting this up with my Mixamp Pro and my Xbox one?

You need the sennheiser PCV05 audio splitter adapter to be able to hook it up to the mix amp and use both sound and mic. FYI it doesn't work with the DSS2 you will only get sound and no mic functions. Obviously the optical out connects the mix amp to the Xbox.

How good is the mic quality on discord and team speak?

I work at home with a virtual desktop system using Lync and it is very good for that have had no complaints from those on the other end. These phones are also open backed which sounds more natural than closed when it is you that is talking. Closed is like talking with your fingers in your ears

Do I need the Pct 05 combo audio adapter to make the game ones on the ps4 work?

No, The Sennheiser Game One should come with a console cable with which you can use the Game One on PS4.
