Is this compact enough to take on a holiday?

Yes for sure, it breaks down into 4 separate pieces and is very compact

What height doorway will it fit?-Our door frames are 200 cm above the floor

I would have thought they would fit most heights. There is a lot of chain length for adjustment. We have a standard door frame and there was plenty of chain left.

What age is this recommended for?

From when babies can hold their heads up on their own until age one or so. It is a great way to release energy for them when they cant crawl or walk

If we already have a hook in a ceiling beam is there anyway this can attach to that, or does it have to be a doorway?

If you had a chain that you could hang from the hook then you could do it, as the bottom part of the bouncer hooks onto the chain. The chain that comes with the bouncer does not appear to be removable from the the doorway grips. You would need to be confident that the chain was robust and that the hook was well and truly screwed in as it takes quite a bit of weight and tension from the child bouncing.
