Hi Lauren, The weight in included and is pictured in the photo. Not sure why this was removed from the description.

the instruction booklet says there is a green "water ring" but mine didn't come with this ring. does the packaging contain this "water ring"?

I also question the green water ring! Mine did not come with it either! It sounds like it is a rubber type seal?

What makes this different from the standard 2l crock made by this company? what makes it "kimchi special edition"?

If I remember right, it was the SPECIAL EDITION BOX that it came in. Everything else was identical. Advertising gimmickâ¦

I washed by hand and now there is water between the jar and plastic around the bottom. Does the plastic come off the glass?

Yes. It screws off, but was extremely difficult to unscrew. My husband says that the threads on the plastic do not match the threads on the glass. It was obvious when he took it out of the box, that there was something askew. When I contacted the company, they said to return it to Amazon. Because I purchased this in the summer and held to give as a Christmas gift, there is no way to return it. We are stuck with it. Good luck to you.
