My method is - Soak noodles in hot water from the kettle for about 4 hours and just keep draining and topping up the hot water regularly. When the water is cool enough you'll need to start pulling the noodles apart as they stick together easily and then continue to soak them. Personal preference here but the noodles are really wide so when they are soft enough to handle I cut each noodle lengthways with a pair of scissors to make them easier to eat. Fiddly but worth it! Drain them off when they are soft enough and then you can use them in broths or stir frys, if I'm not using them straight away I'll mix them with a bit of sesame oil to stop them from sticking together.
