Wonderful blend
Great roast and blend for a pour over. Try smooth and no bitterness. I use a 15:1 water to coffee ratio with a chemex pour over. I pour right off the boil, Bloom for 30 seconds top off to 200ml of water let it settle a bit and then pour the remaining 100ml. Terrific flavors and wonderful aroma. Low acidity roast when brewed as above.

This coffee is delicious beyond words. Amazing flavor, high quality, very fresh every time. Someone bought it for me as a gift and now it is my favorite. I am generally pretty picky about coffee, so if you are a bougie coffee drinker..... order a bag of Southern Weather! You will not regret it.

USPS docked you a star lol
My only issue is that they use USPS for shipping. If you want really slow shipping and no way to know where your package actually is, use the slow and ineffective USPS. Otherwise, the coffee is delicious. It's clear they care about product (bean) quality.

Undrinkable
Undrinkable. My entire family hated it. It’s a clear dark yellow… never seen a coffee this color.

Very bitter
It took me the whole bag of coffee to dial in the right grind and pour but once I did this coffee isn’t bad. I grind baratza medium fine - fine, use a little less water, and pour very slowly at the advised temp. Still I prefer more traditional coffee with a smoother and deeper taste. I have tried eclipse which is more forgiving and tasteful imo.

Fantastic tasting coffee
This is amazing coffee. When I received it, the first thing I noticed was that the beans were roasted 3 days before. I’ve had difficulty getting fresh roasted coffee on Amazon before but this shipped direct from the manufacturer. The flavor is really good. After drinking it for a few days I brewed some coffee with Sbucks beans again and my wife asked me what was wrong with it. This could be a problem; when you get used to good coffee, it’s difficult to go back to the old stuff. If you really enjoy your coffee , it is worth it.
