Very flavorful chile
It’s hot and hits the back of your throat. It also has floral and sweet notes that combine nicely with ancho and hatch chiles. I use in combination with medium hot red chile to add depth and complexity.

My new favorite spice!
I had never heard of aji Amarillo peppers, but after seeing a Peruvian chicken recipe online, I decided to purchase some. I opted for the powder over the paste, as I thought it would keep longer. I needn't have worried. This stuff is SO good! I use it in everything! It is spicy, but also has a wonderful flavor. Maybe a tad sweet. Very different from other chili powders. My new favorite spice!

Great Aji flavor for typical Peruvian dishes.
Was really pleased to find this product on Amazon for a Peruvian dish I wanted to make, Aji Huancaina is one of my favorite things in Peru and I was able to replicate Peruvian Cuisine here in the US with this product!

Great flavor but the powder is moist and clumpy
It's hard to sprinkle on food bc it's so clumpy and moist but I use it for cooking, so it's ok for me. Try it on avocado, something about the combo is just magic.

Too spicy no flavor
This is too spicy, which means it was ground with seeds and it should not be like that. I’ve being using aji amarillo my whole life and it’s supposed to have flavor not much heat. The proper way to process this is to remove the seeds. Unfortunately because is too hot, no flavor can be obtain from it.
