Before I go further, this is NOT gluten-free. It is, however, a good flour for those - like me - who are sensitive to modern wheat to the point where it causes bad pain for hours. Spelt, however works fine for me and others with this issue. And Arrowhead's is tasty, I find it a bit easier to form bread with than other brands - spelt's gluten isn't as strong as regular wheat's - and it makes excellent pie and pizza crusts. I sometimes add barley flour as I like the taste, and the barley flour adds some stronger gluten. This is a quality flour that tastes and smells great. Just like all spelt flour, its doughs aren't as robust as wheat, but it does okay, and with a little practice, I've learned to use it for breads, cakes, cinnamon rolls, soda bread and more. And it makes a great sourdough starter, too. Review: Great product, wish they’d improve the package - I’ve been making sourdough with about 1/4 spelt flour and it gives a really nice wholesome flavor. Not quite like whole wheat, as there isn’t any bitter edge and spelt tastes lighter to me, but spelt still makes the bread more wholegrain. I wish Arrowhead sold larger bags of spelt as these 22 oz bags don’t last long. My one quibble: I like every Arrowhead product I’ve tried, I just wish they’d improve their packaging, for ground foods especially. There’s a ziptop so you can re-close it and that’s fine, but they’ve left a loose edge below the zip, and flour gets stuck there every single time you pour from the bag. Flour also clogs the ziptop track so the bag doesn’t zip so easily. I’ve gotten dogfood bags recently that had a hook and loop (velcro) type closure and that seems much more practical for powders. This one is still good but not like the traditional flour. It's still good and I used ot to make many different things.
