Does this make julienne/ matchsticks as well as thin slices?

Yes it does, there are two attachments one for coarse julienne and one for fine, I hope this helps

How do you adjust thickness of blade?

If you look at picture 2 in the advert there's a large nurled knob.... This adjust the settings
