So the outside is made of granite... how about the heating rack? What type of steel is it? Just making sure it's safe

Please note that it is a glass type surface so if dropped, it can chip however this will not reduce the performance of the cookware.The inside rack is I'm sure make of a stainless steel that's similar to all heating racks that go in high heat cooking situations, such as grill racks, oven racks and such. They have to be made to cooking standards, which is different than quality standards. If this came from China I wouldn't know because their companies sometimes ignore US standards.

Whoever heard of putting liquid in a roasting pan before roasting? What is that about?

Always a good idea putting water when roasting anything, It adds moisture to the oven and prevents drying out. I have no idea why it's never mentioned in recipes. The TV chefs never mention it either. I do it and it does help. The alternative is to seal it in aluminium foil, the remove the foil for 30 minutes to brown the skin.

Has anyone used this on their grills and/or smokers? If so, how does it hold up?

the grill on the unit had a bad weld and was broken, if you are using hardwood in your smoker, I would not want to use this item as it is relatively thin (fast heat transfer) but will flex with heat, not the ideal item.

what is the size? I can't find that anywhere?

The maximum measurements on the one that I bought are 15 3/4" wide by 10" wide, the cooking surface is 8 1/2" by 12 3/4", the unit is well made, but small (two steaks at a time, MAX!).
