The perfect kitchen device for immersion circulation slow-cooking. With the Greater Goods Sous Vide, simply prepare a water bath, insert the device, and set it to the temperature you want to cook at. At 1100 watts, this sous vide reaches your desired temperature in no time, and with its brushless motor, it cooks almost silently as well. There’ll be no distractions as your proteins and veggies bathe toward that perfect cook. In addition, all the features you could want are included and easy-to-use: timer with both positive and negative connotation, setting for both Fahrenheit and Celsius, as well as a temperature calibration feature. This sous vide does it all, not to mention its sleek, modern design.

Review: The Greater Goods Precision Sous-Vide immersion cooker is a nice addition to my kitchen. I've only given it a few runs so far (a 28 hour beef roast and a 4 hour set of pork chops), but it performed admirably both times. The device is high-powered (1,100 watts), so it brings your cooking bath up to temperature quite rapidly and can maintain the desired temperature easily. The controls are very simple (a single knob/button), and as a huge positive, it does NOT require a smartphone, WiFi network, or Bluetooth to be used effectively. While some other brands can be operated without a network, it is sometimes painful to configure cooking time, etc. without using another device (looking at you, Anova), and being able to set temperature and cook time easily from the front panel was a real joy. The device pretty much guides you through setting the temperature and cooking time, and with a final press of the control button, it starts cooking. The status display has a color indicator to show if it's bringing your vessel up to temperature, when it's cooking, and when your specified cooking time has completed. Since there is a calibration adjustment option available, I decided to check the cooking temperature against a high-quality and recently calibrated ThermoWorks instant read thermometer, and found the cooker was right on (within 0.2 degrees Fahrenheit) straight from the box. If I have to have something to quibble over, it's that once your desired cooking time is reached, the device sounds a periodic alarm to let you know it's done. Since I'm most often cooking things sous-vide that aren't going to be harmed by a little additional cooking (unlike oven baking/roasting, sous-vide cooked food isn't going "burn" if left in too long), I would have liked a way to silence or acknowledge the alarm, while letting it continue to cook (which in fact it does do, complete with a "count-up" timer showing the amount of time past your desired cooking time - so no worries about your cooked food unsafely cooling off if you're not around.) I found the easiest solution to get rid of the "done cooking" alarm was to just hit stop, add some additional cook time to the timer, then restart cooking. Certainly not a deal breaker, but it did make me have to deal with the device a little sooner than I would have if the alarm didn't keep beeping every minute or so. All in all, the Greater Goods Precision Sous-Vide cooker is a very nice product, seems to work well, is simple to operate, has enough power to bring your cooking bath up to temp and keep it there, and doesn't require other devices just to make it work. **Q: What is the maximum capacity?**
A: I use mine in a large stock pot and it works fine. It might take it a little longer to heat a large volume of water but as long as you are not heating a bathtub with it, it should do well. It is very handy for pasteurizing a dozen eggs at a time, which is what I use it for.

**Q: How wide is it?**
A: It’s bigger than my Joule, maybe 21/2 inches wide?

**Q: Other than the Anova, what container are you all using?**
A: I've just been using a large stock pot.  I've been very happy with my GG sous vide--but I will get a dedicated container with a lid in the near future.

The Greater Goods Precision Sous-Vide immersion cooker is a nice addition to my kitchen. I've only given it a few runs so far (a 28 hour beef roast and a 4 hour set of pork chops), but it performed admirably both times. I’ve had friends tell me about cooking with their Sous Vide and I didn’t really ever think much about it. Now that I own the Greater Goods Sous Vide, I’m looking for things in the refrigerator to cook with it. For anyone new to these appliances, you’re going to be putting food in either vacuum bags or ziplock bags for cooking. You’ll either need a container accessory that is sold separately, or a tall stock pot. It will need to be a tall pot, not the standard short type. The controls are about as simple as cooking can be, you plug it in, you turn the dial to the temperature you want, you push in on the dial and now your turning the same dial to the desired cook time, one more push of the dial and it’s running. The machine will bring the water up to the desired temperature and then you will hear a beep and the timer will begin to count down. That’s all there is to it. There is a clear display that shows the temperature or time remaining and a simple indicator that changes colors to show status. I really could not find anything negative to say about the design or operation of the product. My first attempt at cooking were several chicken breasts in a gallon ziplock bag. I simply put some seasoning rub on the chicken put them into the pot and when they were ready it was the most delicious chicken I believe I’ve ever eaten. The texture and moisture was perfect. I did throw the breasts into a pan with some olive oil as soon as they came out of the Sous Vide, just to give them a good sear, not even a minute in the pan. The next day I tried multiple vegetables in separate bags, but all cooked at the same time and that also worked perfectly. One thing I think it is worth pointing out is this is not about fast cooking, it is about quality of taste. Cooking may take an hour or more for some food, but it is very worth the wait! I can’t recommend this product highly enough!
