Whole Nutmeg Nutmeg is a spice made from the seed of the nutmeg tree ( Myristica fragrant), and it has a fresh, rich aroma and a woody, bittersweet flavor with hints of clove. Nutmeg is the inner seed, while mace is the red, lace-like substance that covers the seed. When used in cakes, breads, pastries, fruit dishes and pies it pairs well with ginger, cinnamon and cloves. When used in lamb, mutton, meat stews, spinach dishes, veal, vegetable recipes and even pasta sauces, it pairs well with cumin, coriander, pepper and thyme. To make nutmeg for seasoning, the nutmeg seeds are dried gradually in the sun over a period of six to eight weeks. During this time, the nutmeg shrinks away from its hard seed coat. The spice is ready when the kernels rattle in their shells when shaken. It is separated from the outer coat (the mace). Review: Absolutely Incredible! But Beware: *Too* Fresh for a Nutmeg Grinder or Mill! - This nutmeg is absolutely incredible! It is so fresh, and so fragrant, that you will want to just keep inhaling, and maybe lick it. It will work well with a nutmeg grater (you know, the kind where if you're not careful you'll end up grating your finger tips or knuckle), but beware: it is so fresh that it is not dry enough to work in a grinder (such as the ones where you put the nutmeg in the bottom, twist the top on, and then turn a crank handle - you may also call these a nutmeg mill). Regardless, it won't work well - you will need to set the nutmeg out and let it air dry for..well...weeks (at least in our case) before it will work in one of those devices. But you can always inhale it's heady scent as you walk by, while waiting for it to dry out enough. Or pick up a grater - but watch those fingers!

**Q: Seller.   freeze or not ???**
A: I just put mine in the refrigerator in a lock tight bag...they keep forever, I grate mine as I need the nutmeg in recipes...have done this for years.

**Q: Do these still have the outer shell?**
A: No outer shell it's removed

**Q: Never had whole and not sure of the hardness. Will they grind in a small coffee grinder?**
A: Yes, I grind these in a coffee grinder routinely.

**Q: Does This Come In Dark Brown?**
A: No this is light brown & this comes same as in the image of the label

This nutmeg is absolutely incredible! It is so fresh, and so fragrant, that you will want to just keep inhaling, and maybe lick it. It will work well with a nutmeg grater (you know, the kind where if you're not careful you'll end up grating your finger tips or knuckle), but beware: it is so fresh that it is not dry enough to work in a grinder (such as the ones where you put the nutmeg in the bottom, twist the top on, and then turn a crank handle - you may also call these a nutmeg mill). Regardless, it won't work well - you will need to set the nutmeg out and let it air dry for..well...weeks (at least in our case) before it will work in one of those devices.
