desertcart.com : Doña Arepa Extrafina Yellow Corn Flour 35oz 6 Pack : Grocery & Gourmet Food Review: Resistant starch - I decided to try this product because I'd read various articles about how food could be made in such a way that it did not cause such a huge rise in blood sugar. One thing was to make rice as usual but then refrigerate it overnight before eating it. I also read about this particular type of corn flour, which is used to make arepas. I have found that indeed it does not raise my blood glucose level the way ordinary corn meal would. These things are also very easy to make. I mix the flour with dried full-fat milk and add and equal amount (as the flour) in water that has been heated in a kettle. I also add either some roasted garlic and salt or to make a sweet one, a small amount of sugar. Mix together and let it sit while you prepare a pan for frying. I use either olive or canola oil with a pat of butter (for crisping up the patties). Then make patties from the somewhat solidified flour (after a couple of minutes) and fry. Using a fish spatula really helps to prevent the cooked part of the patties from sticking to the pan. I pour a little maple syrup on the sweet ones or maybe soy sauce to the savory ones. They are delicious and quick. And they do not cause my blood glucose to skyrocket like corn meal would. Highly recommended. Review: Yes! Just YES - Don't even hesitate. Iused this to make Trinidadian styled pastelles and the Donarepa was THE BOMB!
