Aussi ce set permet de concilier à la fois des lames de très haut niveau, un éventail limité mais complet des 3 lames indispensables (l'office, petit et fonctionnel, l'éminceur pour le gros et le 10cm pour lever les filets, les tomates, etc.) et un prix compétitif. Le tranchant est vraiment rasoir, à un point que même habitué aux couteaux (je suis chef de mon restaurant et passionné de couteaux), mes premiers pas avec les les Kai ont été... incisifs ! Gare aux doigts... Attention : laver et sécher après usage, ne pas mettre en machine, en prendre soin comme d'un ami... Sinon ils vous le font payer. Pour l'entretien, j'ai pris les pierres à aiguiser Kasumi 240/1000 et 3000/8000 (chères mais indispensables). Ne vous amusez pas à les affuter sur des pierres cheap, vous les tueriez. La boite en bois comme écrin complète le tout...
