The chef knife is the workhorse of the kitchen, and I use my chef knife for almost everything. Kitchen Emperor paid attention to the details, the knife is beautifully polished and I really like the way the knife blade and the handle meet (the bolster), it feels comfortable and smooth. The knife is a great value; cost on amazon is just $56.89 (an amazing pricing for Damascus steal) This is a great value for someone that does not want to break the bank buying a chef knife. It’s a great starter knife for the home cook. The handle scales appear to be made of carbon fiber which is well done; the rivets used for the scales are beautifully polished and the knife has a full tang. I like the radius of the blade, making it easy for rocking the knife when finely chopping. If you are in the area of Vienna Virginia, stop by Culinaria Cooking School and take this knife for a test drive and see how you like it. They felt mostly balanced and comfortable.The handle has a lovely weight to it and the balance is perfect. Pinch grip right at the bolster feels just right - the extra heft of the handle feels gone. It's almost like the knife were just an extension of my hand. I've only used the knife a handful of times, but the edge is still sharp.The packaging is superb and really makes this knife feel like something special. It contains instructions for use and care, a polishing cloth. I've only experienced a few products with such elaborate packaging. Testing it in cutting various things (vegetables, meat) all yielded excellent result.I do hope the blade holds up to its claim, which I feel like it should. Japanese knives all tend to be super sharp, but tend to get dull quicker. That’s why it’s important to learn the art of knife sharpening with a whet stone.Overall, happy with the purchase, especially with the price.
