Can I just turn off the light? I dont want it light on at night.

The built-in on/off switch is designed to control the lights only.It won't control the whole charger station. You can turn off the light separately if you wish it didn't disturb you at night.and your ps5 remotes would continue charging. besides,due to the built-in automatic protective chip of dualsense ,it never overcharge.

Can I use a different cable and plug into the ps5 for power?

You likely could, but you wouldn't want to, as the PS5 only outputs 1.5 amps vs the included 3 amp brick. Assuming it works, it wouldn't charge nearly as fast.
