Perfect Venison Breakfast Sausage!
Fantastic breakfast sausage blend. I've tried other blends as well as making my own. This beats it hands down. Made 40lbs of venison/pork sausage with this last fall and its a HUGE hit for everyone that tries it. Not too salty and flavor is great! I've had two separate compliments of the "best biscuits and gravy I've ever had."

Beware the Salt!
Great blend for authentic "country" sausage flavor, but proceed with caution. If you are a small batch sausage maker like me, take the seasoning suggestion offered on Legg's website with a grain of salt, literally. The site offers a "rule of thumb" of 1 TBS of seasoning per pound of ground pork. This ratio produced sausage far too salty for me. I would suggest beginning with a tbs per pound, try a test patty and adjust to taste. The time tested wisdom that it's easy to add but impossible to take away very much applies here.

Good Deal!
I made 50 lbs of sausage yesterday. It was the first time using this seasoning. I sprinkled the seasoning on the meat before I ran it through the grinder to make it a little easier to mix afterwards. We really like the flavor but it is a little salty. This coming from someone that loves salt! Overall, it’s easy to use and I would buy it again.

Tasty Country Sausage Spice Blend
Good and tasty country sausage spice blend. For me it’s a little bit more salt than I like but not over powering. I also added a touch more sage. Get you a pork butt and some of this mix and you want be disappointed.
