These fine and delicate asparagus spears need only the lightest of cooking to preserve their renowned and distinct flavour. Asparagus can be enjoyed as part of a wide variety of dishes, including risotto and meat and fish dishes. However, we find the best way to enjoy the unique flavour of asparagus is on it’s own.Roll the stems in olive oil. Coat in salt and pepper, and a little chopped fresh garlic. Place on a sheet of baking paper on an oven-proof tray or dish. Roast in a hot oven until they are slightly blistered and sizzling. Squeeze fresh lemon juice over the stems and enjoy after allowing to cool a little.
