What does modified mean? How is it modified? Genetically?

FYI, "modified" indicates the starch has been cooked (to remove that pasty taste), dried and pulverized. AP flour is typically 67-ish% starch, 33-ish% flour (the ground edible seeds of cereal plants - wheat, sorghum, rice, etc.) Generally, regular packaged starch bought in a grocery store is derived from corn; hence the name "Corn Starch." All flour contains starch, starch doesn't contain flour. It's what's used in instant pudding for thickening and works wonders to stabilize whipped cream for shadow piped edges.

Would this work for thickening homemade yogurt?

Yes once it has cooled. However your yogurt should not need thickener if your culture was alive.

I don't know about this stuff much. It was called for in a recipe for some gluten free pita bread. It works fine and I got it packaged well and fresh. Not something I use on a daily basis, but worked for the recipe I used it in.
