Great stone, produces a very sharp edge.
Great stone, I love the larger platform, I can get consistent strokes with longer knives. The 1000 grit is just right for almost all of my kitchen knives. To get any sharper I need to move to a 3000 - 4000 grit to finish with razor sharpness which is not really necessary.

Respectable Stone
Very respectable. I am a professional sushi chef, and have dabbled with multiple stones over the years. The Cerax is a great stone that will last you a long time, if taken proper care. This stone if of lower grit, but honestly if you are a home chef and just want a single stone to keep your edge sharp for a decent price, this is the one. Just make sure to get a level stone as well to keep it flat over repeated use.

Excellent stone!
Extra large whetstone...works fast to sharpen a blade but you have to know what you are doing. Effective once you figure it out. Much better quality than the other brands. This is the real deal. You will only ever need to buy this once for an industrial kitchen or workshop. I bought several grits. Expensive but good tools cost!

The one stone to have if you can only have one.
Terrific stone, if I could only have one, this one would be it. Cuts fast enough to fix problems (with patience and work), sharpens great, lighten up and taper your direction changes at the end, and the edge you get will strop out to sharp enough for most any work. Much sharper than you would expect for 1000 grit. Tried it on an old Wilkinson Sword chefs knife that had been damaged by a draw through carbide knife destroyer, cleaned up the waves and jagged edge, now nice and smooth - sharper than any stainless knife I've ever done. Does Xacto blades sharper than factory, and wood carving knives (what I really wanted it for) actually better than factory. Now I'm almost sorry I went for the Chosera 3000 as a polisher, truth be told, I don't really need it, The Cerax 1000 rocks!

Great stone at any price point
This is one of the better stones I have ever used, granted I'm not super experienced in the whetstone area, I came off of diamond plates and went into a king 1k, suehiro oka 3k, and suehiro rika 5k...to be honest I expected a bit more agressiveness as the 3k seems super fast cutting for its grit, but the cerax is still much faster than the king, I would say it is true to grit in my limited experience, and I used it to sharpen a 59 rockwell knife and a 62 rockwell knife, and it seemed maybe a little slower on the 62, but it didn't seem to have any problem with it, I like the feel of the stone, while it is a soaker, it seemed like 5-10 minutes is more than enough (I did soak it for an hour or 2 first day, which appeared to be way too much as the cutting experience was much less aggressive, to the point where i thought i had made a mistake), I strongly suggest not perma soaking it

beautiful in form and function
It cuts well. It wasn't aggressive at all right out of the box so I hit it with the little nagura, rinsed off that grit, and it has been great ever since. Consistent predictable material removal. I suck at detecting a burr by feel so I use a 60x loupe to look at the edge as I sharpen. The scratch pattern is very even and fine. I have sharpened 14 or 15 knives from small paring knives to 10" carving knives, some Western style and some harder Japanese steel. It still looks great. No noticeable dish. I also bought the Cerax 3000 to be my finishing stone. From first use these two became the only stones I use for knives that aren't severely damaged or don't need reprofiling. I use the cheap little nagura they sent with it to clean the stone when I'm done, not during sharpening. This is a synthetic stone, it does not depend on a slurry to cut properly. Plus I don't know the grit of it. I know Suehiro isn't going to include anything that will damage the stone. That doesn't mean it's the same grit as the stone though so I don't expose knives to it.

Superb Stone for a Beginner
This is a great stone. Fast, consistent, makes a great slurry without dishing super fast, I just really like it. Only downside is it is a soaker. I leave it in a water basin 24/7 so this is no issue for me, but before I started doing that I just left it in a shallow dish for about 10 minutes before using. Coming from DMT diamond plates, this stone is maybe 75% as fast, so instead of 8 strokes per side you may need 12. Not a big deal really, and it has the upside of allowing some more wiggle room if you do happen to lose focus and change angles for a few strokes. One advantage is that since there is slurry, the stone is more forgiving of inconsistent angles, and leave the edge with a hazy, cloudy finish.

Best wetstone ever!
I bought two Suehiro CERAX soaking whetstones in 1000 and 5000 size grit. I have always used hardware store whetstones and never could get a good edge on knifes. My wife had expensive German kitchen knifes and I could never get them sharp. I was going to buy her new knives and after some internet searching, I heard about the Suehiro CERAX whetstones and decided to give them a try. WOW, the first knife I sharpened after following the directions was sharper than when new. I could run that knife along the edge of a sheet of paper and it easily sliced off thin slices of paper. It sliced through difficult to cut food like tomatoes as thin slices that you could see through. I went crazy and started sharpening every knife we owned and now with occasional touch up sharpening our knives perform like a Samurai katana. These whetstones are amazing and the delivery service was over night. Amazon Prime delivery is fantastic. A few weeks ago I ordered a product at 3 PM and when I woke the next morning the package was sitting at my front door.

Excellent sharpening stone, you get what you pay for
Tried it on a VG-10 and an S30V folders - and this stone does a great job. Shaves the metal off easily, and also is very easy to clean. It isn't as messy as the Kings I was using prior, and definitely cuts the metal better. Wnen done, I am not seeing any scratches on it either, so it will probably last much longe (the size of the stone is very generous). After a 10min soak, the surface feels very smooth with excellent feedback. I highly recommend this product and will purchase a similar one in 3000 grit.

正直に言って、これまで使ってきたナニワの「剛研DX」「赤門前DX」「剛研新」と比べると、CERAXは格段に優れています。ただし、「剛研玄人」との違いとなると、主に研ぎ心地の差くらいでしょうか。それくらい、非常に高いレベルで互角に張り合っていると感じます。 また、研いだあとに砥石に黒い跡が残るのがCERAX、跡が残らないのが剛研玄人という違いもあります。黒い跡は、刃が砥石にどう当たっているかを確認する目安になるので便利ですが、人によっては好みが分かれるところかもしれません。 初心者の方におすすめするなら、研ぎ方の癖を把握するのにも役立つことから、私はCERAXを推します。価格も手頃ですしね。ただ、もし使っていて減りが早いと感じるなら、「2020」や「3030」のようなタイプを選ぶのが良いかもしれません。 まだ一度しか使っていないので、今後使い続けるうちに評価が変わる可能性もあります。

Excellent Quality Stone from a Reputable Company
This is an excellent ceramic sharpening stone from a reputable company. I use solely for sharpening my Japanese knives but is just as suitable for your more day to day kitchen knives. The stone comes in a nice box and includes a small stone to create that all important ‘slurry’ when sharpening your knives. It also comes with a ‘rubber’ holder for the stone which helps protect it from damage. Be sure to make sure you dry the stone before putting back in box (if that’s what you do) because mould will grow within the cardboard box; lesson learnt. Good price from Amazon and would highly recommend this stone.
