What do you do with the bucket? the instructions only comment about the glass jar

The bucket is what you use for your primary ferment. It's better to have the extra room for all of the CO2 or if you are adding fruit etc. After 2 months transfer from the bucket into the glass carboy

Is this for making wine or beer?

I made mead with it. I think beer and wine follow the same basic process so yes.

do you have to sign for delivery?

We do not add signature confirmation onto any of our shipments, but UPS ground will sometimes require it depending on the neighborhood or driver.
