Do these pods dissolve in cold water, unlike the messy Tide pods that stain your clothes?

I haven't had any problems with the PODS dissolving.

I have sensitive skin. Does this irritate anyones skin?

If you have sensitive skin it's better to go with free and clear detergents. ALL (the most popular free and clear), Tide, Cheer, Arm and Hammer, etc... make versions of them. If you want a scent you can always get scent crystals by Purex, Downy or other, and if one of those irritate your skin you can always still use the detergent even if you need to discontinue use of the scent crystals.

What happens to the plastic the pod is in when it is washed?

It is not plastic, more like a gelcap that is water soluble...... think of a nyquill gelcap.
