I make my own bread and could not find this flour in any store around me. It makes it possible to make the whole wheat bread I love to make. The bread turns out delicious.

This is by far the best "cream of wheat" dupe I have ever had! I will never go back to the original. So I'm on an alkaline diet, and trying to find foods to swap out for healthier versions has been a bit of a challenge. I love cream of wheat and now I get to eat it daily without feeling guilty! And you can dress it up to fit your taste buds however you like! I add cinnamon and blue agave nectar while cooking, then I'll drizzle a little maple syrup over the top after adding my toppings. And you can make it with either water or nut milk!

I had never tried Teff before-- I used the dark brown one and it made an awesome tasting GF bread! I used psyllium husk as the binder and baking soda, baking powder and salt and water and a tablespoon of apple cider vinegar for a little acidity. It was so yummy and the texture was great! Update: after eating bread made with this flour I started to have symptoms of too much oxalate. I have high oxalate levels so I have to watch my oxalate intake. To my dismay I learned this flour is extremely high in oxalates! To put it in perspective, 1/2 cup of regular wheat flour has 8.35 mg of Oxalate while the same amount of Teff flour contains a whopping 100 mg! My doctor set my total daily limit at 80 mg so I guess this one is out for me. Be careful if you are prone to kidney stones or have other oxalate related health conditions.
