Does the Harmon drive app require a subscription for any of its features?

Both of the other answers are incomplete. No subscription is needed if you are happy with the cloud storage ("vault") only holding uploaded videos for 24 hours (I think slightly short, but it's free). For $5/month they will stay for 7 days. There is no fee for using the app to do all of the stuff a normal dash camera does, but it does require signing in with a free account.

Is it possible to pair this with the mini to have full coverage of the sides?

Yes, you can pair up to four cameras. The Garmin Drive app can control and play back synchronized video from up to 4 dash cameras mounted to the sides of your vehicle to capture footage from multiple viewpoints.

Do you need an Adapter with the SD card?

An adapter is not necessary to insert the microSD card into Garmin Dash Cam Mini 2, but an adapter may be required to insert the microSD card into your computer depending on the computer's peripherals or available card reader slots.
