Oh My This is GOOD Vinegar. I didn't know what to expect and what I received I could never have imagined. When you taste it for the first time, you know it's vinegar BUT.... The flavor is hard to describe. I will say it's sweet, as vinegars go, with a taste that is reminiscent of chocolate, good chocolate, not cheap chocolate. Worked well in a recipe I had that called for it. Flavor is unusual - I liken it to my experience with Fish Sauce, which smells terrible but adds remarkable taste. Tasting just the vinegar was initially disappointing but it worked well in the dish.

I use it foe hot and sour soup. Great flavor.....more malty tasting with less "sour".

If you like Unami, this is your pick. It is a little too powerful for us, but when mixed with olive oil and herbs it brings out delicious notes.

This is fantastic for making dumpling dipping sauce. So tangy and delicious! I actually add a little to the marinade for "drug eggs" too.

Even though I find it quite a bit pricey, it's not bad and has a good flavor. It pairs pretty well with dumplings, so I'm happy at least about that.
