Why is this bread's expiration date a year from the day purchased? Are there any tocopherols/synthetic ingredients to preserve that are not listed?

All of the ingredients are listed and I'm pretty sure that pasteurization adds to the bread's shelf life. I keep mine stored in the freezer until I'm ready to open a package. Then, I slide in a sheet of paper towel to help keep it dry after breaking the seal. Once opened, it's best to keep it stored in the refrigerator and consume it withn 4-5 days.

Is there a trick to toasting this bread? I have not been able to get it crispy, even with a longer time

We put the slice on the rack (not a pan) in our toaster over and turn it up as high as it will go. I think it has something to do with how dark the bread is (darker type bread seems to take longer to toast) as well as how dense it is. I don't think it will ever get as "toasty" as regular bread due to the density, but you can achieve a satisfactorily toasted piece usually. I have also put it into a non-stick fry pan - with no oil or butter- and toasted it there. That has worked for me.Good luck.
