Could someone comment on how garum tastes different from asian fish sauce? this product costs 15x that of red boat.

much less salty but still old old fish smell. Same uses but better for old Roman based dishes for authenticity.

The label says 80mg of sodium in a tablespoon - but it tastes significantly more salty than that. What makes it so salty?

I just found out about garum. I don't know whether their label is accurate or not regarding the sodium; but salt is one of the key ingredients. I read the traditional recipe is fill a sealed barrel with a layer of minced fish, a similar layer of spice, and then a layer of salt. This is repeated until the barrel is full. So I assume the salty taste is from salt, and about a third of the substance is salt.

Mine arrived with a slightly different label on the front of the bottle...still legit?

The one I have is just as pictured here. And delightfully tasty.
