Do the death troopers have a shoulder pad/scarf?

Not in the battle pack. The death troopers in 75156 krennic's shuttle do however come with pauldrons.

My 4yo loves star wars and building things. Would he be able to tackle this (with some help from a parent)? He's been asking for these sets!

This is a great set to introduce your builder to building Star Wars LEGO sets. This set only has a small build and many minifigures which will allow the building to be quick and the play to begin. I would typically recommend starting with sets for the LEGO Juniors theme for first time builders but there are no Star Wars sets in this theme. The Juniors theme does not feature any super small pieces or stickers which helps kids build successfully.

Legos for 5 year old girl?

If your 5 year old builder is a Star Wars™ fan then this might just be the right set for her. If you need any other suggestions I would check out LEGO City and LEGO Creator sets.
