Yes, only superfine white rice. It is the best and I have experimented with other and this is the best for baking. You can substitute this in any recipe that calls for flour. I make a pound cake from this and I am gluten free and this works very well. They also superfine brown rice for other recipes.

Can you this flour to make a pizza crust?

you can. I used it as part of a gluten free flour blend I was building for baking and did make pizza crust with the blend.

Is this from raw rice or is the rice cooked first before making it into a flour?

This flour is made from uncooked rice

Is this flour a one to one conversion with regular flour
