Review: Koji, it makes me feel a little emoji! - Good product! I made a couple of batches of koji rice and beans for the first time using this for a type of miso. It grew exceptionally well on the beans and rice, the enzyme produced are working their magic because the homemade miso is tasting great after only a month or so of aging! Once I deplete this pouch I’ll be buying more!

**Q: Is this Koji Kin ( the green coloured spore ) or is this Koji inoculated rice ?**
A: Recieved my order, and to be honest I'm not sure it's spore. Kind of feels like they might just be grinding up a package of koji rice and repackaging it. Definitly not a green powder. Kind of sketchy that the seller has zero info about themselves or their product that I can find.

**Q: Is it ok to deep-freeze the spore in order to extend storage life? if so, what storage life can i expect?**
A: Deep-Freeze is not recommended. Just refrigerated and it's good for 1 year or so.

**Q: Is this pure koji kin? or grinded koji rice?**
A: This is pure koji spores. These are spores harvested from the actual fungi.

**Q: After I inoculate this on rice, will it give the rice a nice fluffy white color like how store bought koji rice looks?**
A: Yes.  
If using brown rice, white color koji is obvious.  
White color koji appears at the end of 2nd day.

I like experimenting a lot with yeast strains and fermentation. I purchased this to test conversion of heirloom corn for bourbon production. This strain of Koji works well on American maize, even 2 year old grains. The conversion process exceeded expectations and umami flavor enhanced the corns flavor ten fold. Spirits taste great white, can't wait to age the bourbon.
