The texture is the most similar replication of classic dried flat jerky (think gas station stuff... oberto, jack links, etc), but actually slightly more tender. To best describe it... when you try to tear it with a piece in your mouth, it's kind of hard to. And I like that! It's not actually tough to chew. The ginger flavor is really great and has a wonderfully juicy soy sauce touch to it. The red bag flavor (I think it's red chili flakes) is still my favorite one though.
