In another life I may have been a chef. I find that you must have excellent tools to truly enjoy cooking. One of the most important tools is an excellent chef's knife. When you own one, you will find that it will lose it's edge in 2-5 months, depending upon your use. You have to be able to sharpen and hone your own knife. This 2 grit Whetstone system is the best, as the 1000 grit cleans up the edge and gets any major imperfections out and the 6000 grit gives me that razor sharp edge. The silicone/rubber gasket that the stone sets in are a perfect fit with tight tolerance to assist in maintaining a perfect and consistent edge for apexing the knife.
