I was very sorry to find, after the sizable investment in a whole wheel that this is not the product being advertised. They will send you a low grade, dry cheese with a texture approaching rubber in addition to being peppered throughout with small holes like a swiss cheese. There is no creaminess, no aroma, no depth of flavor....in fact this cheese hardly has any taste or flavor at all. It's more like a hard Mozarella than a Manchego without the ability to melt well. They do a great job with the bait and switch showing a picture of one of the more reknown, famous Manchego's of Spain and then send you a third rate, rubbery imitation. Buyer beware.
