How far does this hang from the ceiling in the closemount installation? We have a low ceiling in our bedroom.

First, ignore the printed instructions that come with fan on Page 5 that suggest "Flushmount Installation - not available for this model." In fact, it can be flush mounted per the .pdf manual's "CLOSEMOUNT INSTRUCTIONS" on Page 10 (which you can download from either Honeywell or Amazon). As noted by two others who apparently did the installation correctly, the close mount leaves the bottom of the light's globe at just 9.5" from the ceiling. The blades are roughly 5" from the ceiling. Also note that the .pdf version of the installation manual is from June 4, 2014 and it lists a 'red' hot/power wire coming from the receiver — ignore that as it is correctly BLACK. The printed version that comes with the fan is dated May 21, 2020. While it incorrectly states that you cannot flush mount the unit (again, see the .pdf version), it does have the correct update for the remote control. You'll also note that the light bulb arrangement is different than suggested in the Amazon listing. Instead of three candelabra based bulbs it has two tiny standard (A19) based bulbs. The lighting is 'dim' to say the least. The problem is that these are physically small sized bulbs (think appliance bulb). I'm hunting for alternatives that are brighter. All said, the installation was rather straightforward. Besides the dim bulbs, the fan does make a noticeable noise which is rather disappointing. One gets what one pays for.

Says it has a dimmer but the picture of the remote looks like it’s just an on off. Please explain.?

I just installed this yesterday 6/24/20. My remote dims the light by holding the light button down. It slowly dims and then slowly goes to full bright.

Where do you put the remote control brain? The unit does not fit it the top ceiling cap.

It barely fits under the top ceiling cap but it fits. I suggest you connect the house wires and all ground wires before hanging the fan. The brain fits snugly on top of the hanging bracket. Your question is appropriate since the instructions are inadequate.
