At first I was a bit disappointed that this is too basic for me, but I really have come to appreciate this book especially in comparison to Ksenia Penkina book Textures. It’s really well written and edited. I like that many options are provided for the same basic recipe. Very easy to follow, doesn’t call for hard to find ingredients. Don’t hesitate to buy it. This will make a great gift for anyone.

Wonderful
I was looking for a book to help me with mousse cakes first and foremost. At first I was a bit disappointed that this is too basic for me, but I really have come to appreciate this book especially in comparison to Ksenia Penkina book Textures. It’s really well written and edited. I like that many options are provided for the same basic recipe. Very easy to follow, doesn’t call for hard to find ingredients. Don’t hesitate to buy it. This will make a great gift for anyone.

Generous and inspiring recipes
I am too lazy to write any reviews but this will be my first because i really want to share how fantastic this book is. Unlike most baking books which pretty much gives u a recipe to work on, Domanique delivers the intent of the book; "everyone can bake, simple recipes to master and mix" The content reflects the generousity of the teachings; you can feel the author genuinely wants to share his knowledge and skills with you. His recipes for dessert components are building blocks for your own creativity; no more being a copycat baker, following a recipe from a to z. The book is also peppered with stories of his life .. ok... no more spoilers ! Enjoy the book and be imspired.

How is it that the best pastry chef in the world can make recipes that are easy to follow? Dominique Ansel is so creative and his recipes are amazing. I love that he gives the basics then tells you how to do variations - allowing your own creativity to spark. I highly recommend all of his cookbooks - even if you don't bake a single thing - they make you feel good just looking through them and having them sitting on your shelf!

Well organized, beautiful book
I just received this book and already love the way that it’s organized. The recipes seem interesting and I like the anecdotal stories. One thing I did notice is that the recipe for Raspberry Cream Puff cake uses profiteroles. However, based on the photo on page 160, it looks like Chef Ansel also applied a craquelin topping to the profiterole. I don’t see how that kind of crust can be achieved otherwise & there is no mention of it in the recipe. The profiterole recipe provided would have a smoother crust. If Chef Ansel can clarify this and or provide his technique to get that crackly crust, It would be very much appreciated. Thank you!

Amazing recipes and images! Very clear book
I love this book because I love and admire its creators content. This type of baking is a bit more elaborated. The book isn’t to follow a specific long recipe, but for you to learn how to mix and match different recipes and start creating your own desserts. The book has many individual recipes for bases, sponges, creams, filling etc, and then a few recipes where it tells you “ok, you’ll use the base from page 22, filling from page 75 and frosting from page 152” so you’ll need to follow 3 individual recipes for 1 full dessert. I love it but it’s not ideal for a very beginner baker.

A must-have!
My wife was going on and on about this book. So I did what any husband would do - I bought it for her. In doing so I was handsomely rewarded with a plethora of cakes, breads, and other confectioneries. Overall the desserts are less on the sweet side than I'm used to but the flavors are amazing. If you're looking for something new to bake, definitely check it out. The book also has some basic recipes for fondant and other things like that so it's super helpful when you need to whip something up for any occasion.

Ein wunderbares Buch. Ich kenne den Autor schon aus einer Masterclass und bin seitdem begeistert. Am meisten gefällt mir das Baukastensystem des Buches - man lernt viele Basics, die sich wunderbar kombinieren lassen. Anschließend sind der Phantasie keine Grenzen mehr gesetzt. Die Erklärungen sind sehr gut gemacht, falls man sich aber trotzdem nicht sicher ist (kam bisher bei mir noch nicht vor): einiges wird in Videoform auf dem Instagramprofil von Dominique Ansel nochmals gezeigt. Bisher haben die Rezepte beim ausprobieren auch gut funktioniert und waren unglaublich lecker. Klare Kaufempfehlung für alle, die ihre Backkünste aufs nächste Level bringen wollen!

Written in a lovely engaging and encouraging style by someone who is obviously passionate about his craft. Clear explanations and a lovely concept. I like the way all recipes are written for the same size cake tin so no requirement to have different tins and mould of all shapes and sizes. It’s very practical and a great introduction to patisserie. It may sound wierd but I also loved the feel of the book. It’s clearly laid out and printed on robust paper. I get as much joy sitting and reading it as I do eating the cakes!

This is the second book by Domique which we have purchased. It has everything you need to know about Baking as well as very many mouthwatering recipes. His go-to chocolate cake, how to make the different syrups you may need to finish off a particular cake, his go-to banana bread, go-to pastry cream and the list goes on. If you need to know how to make lemon curd, he has it, if you need to know how to make ganache, he has it...literally everything you need to know to be successful at baking. Loving this book.
