Yes, the sleeve can be remove and exposing the stainless steel handle.

Yes works for that. But we do smash burgers and doesn't work as well for that. There is one on amazon that weighs 5 lbs but cost $100.

Better steaks and bacon

This is amazing. Makes a huge difference when cooking. I like the fact that it is stainless steel, much easier to clean and care for than cast iron versions. The handle is high up enough too that your hand is more protected from the heat. But it won't fit in every pan because of the length, so check before you buy.
