Badia Ground Annatto, Achiote Molido, 2.75 Ounces

I love everything about it..it has the scent and all the flavor and of course the color.

I was asked to make yellow Mexican rice for a charity cooking gig so I looked up a recipe on Pati Jinich's website. That recipe required annato seed and this was the fastest way to get some. Annotto seed, aka achiote, is what gives yellow Mexican rice its color and some of the chile flavor. This spice, plus a good dose of Rancho Gordo mixed chile powder, made the rice turn out very well. Another cook in the kitchen where I was working said she'd add this recipe and this ingredient to her repertoire.
