Takes all the guesswork out of sous vide cooking
I love the extreme temp sensitivity and accuracy almost as much as I love the built-in Toolbox sous vide app. Unlike all other sous vide apps I've encountered the Toolbox cooks by the density of the food, thereby ensuring the ability to cook at your given temperature to total pastureization of the cooked food which is extremely important when cooking for duration at such low temps. I also enjoy the "TURBO" function that their other sous vide product borrows, only it's simply called the "speed-up" function in the Toolbox app. I've compare cook times from other well reviewd product who give cook times like 2 hrs for a steak without asking about the thickness of the steak ... i'm quite sure that 2hrs is sufficient for some steaks, but this unit asks for the thickness of the steak, if you merely want to reach core temp, or if you wish to pasturize only the surface or pasteurize the food to the core guaranteeing a totaly safe to eat cook, and the derived cook time takes these variables to determine the REAL cooktime. Then if that time is too long it offers the ability to speed up fook time by increasing the bath by 4 degrees, without affecting the doneness of the food, tihus softening the cook time by several hrs in some cases! Amazing!. The app also alows you to select exactly how tender you want to cook a tough piece of meat i.e. chuck roast etc. I cooked 1 for 24hrs and it was great like steak medium rare(135 degrees), then another for 36 hrs @ 135 degrees which had the texture of filet mignon, all by selecting a more tender using the slider in the app. Then of course there's the included temp probe with the 750 model, not included with the 700 model. I havent had the opportunity to use the probe yet. Most issues listed here in my experience are operator error. I was about to return my unit until I took basic steps like ... reading the freaking manual where I learned that a simple descaling was the cause of my new units weird rattling sound. To be fair Breville should make running a descale the 1st thing to do before actual use. Aftger my descale operation I've enjoyed many cooks w/o a single incident. The unit is silky quiet and powerful and accurate and smart. What else could anyone ask for. I love it. The only downside is the $$$, but for me it's well worth it.

Absolutely garbage with no support.
This is a giant waste of money. The system heats up, and then shuts down due to low water alarms. I called the manufacturer and they won’t send a replacement for at least a week. The system doesn’t have controls via your phone either which is huge because what if the system fails while you’re not home? The reliability of this device is crazy. I check the water line and it’s just below the max water line level. I take the unit out, unplug it, rinse it, clean it, it’s brand new, place it back in, and boom. It fails the prime. I set it to 10 degrees higher and then it works but only until it reaches the set temperature. Brand new. I have meat already cooking, and it’s all going to have to be done differently. In the images, you can see my setup. Insulated is the way to go as it will save you time and money. The water level, when the lid is closed to right below the max water level line and in the one image you can see the low level line with the water level with the lid partially open. You can set this system to your set temp and it will make it there but it will die right after and will not continue no matter what you do. Reliability is a must for me and Breville simply isn’t providing that especially with how many other have the exact same issues. Breville needs a better app and a better product. In the last image, I have set the temp higher so that when it fails, it fails at the higher temp. The temperature loss is roughly 1-2 degrees per 6 hours. Simply have to keep turning the thing on and MacGuyver your way through it until a replacement is received. That’s why the insulated setup is so important. Awesome product that anyone can use
This is my third sous vide. This product is an amazing and easy to use product for fine dining quality at home. This is so close to commercial quality and worth every penny!!! Perfect cooking temps and time. I highly recommend!

Such an Amazing Device! Made for the Commercial Kitchen with Built-in HACCP monitoring features!
Polyscience was the 1st company to make sous vide circulators for the commercial kitchen, and they have hit this one out of the park! The heating elements are based on "Induction" technology, the built in temperature probe lets you monitor the internal temperature of your food so you can do "delta-T" cooking or monitor the temps for your HACCP plan for health department's. You can download the logs into your phone using bluetooth to save them. The built in "Sous Vide Toolbox" gives you times and temps on just about every type of food. Quick and Easy
Use this daily for steaks of all sizes (3lb, 22oz, 16oz, 12oz and 8oz). Works wonderfully and cuts grill time.

Grommets... Errors
I’ve encountered more issues with this machine than I can count. First, the unit frequently claims it has reached the set temperature, only to shut down with an error beeping about a "low water level"—even when it's filled to the max line. Adding to the frustration, a small grommet that holds the footer wears out after just 4-6 weeks of use. Replacing it is a nightmare; it takes hours on the phone, arguing with customer service over the availability of a tiny part that likely costs a few cents. I even tried to buy a hundred of these grommets to avoid the hassle, but was told that’s not possible. My machine runs about 12 hours a day, 6 days a week, but even with frequent use, I didn’t expect the external probes to fail so soon. Disappointing purchase all around.

HydroPro -- No More!
For the record, I typically enjoy Breville and PolyScience products; unfortunately, the HydroPro Plus missed the mark. Let me start off with what I like. I like the size, built in timer, carrying case, external temperature probe, preheat speed, and the “toolbox” --the guided process for the cooking/pasteurizing time based on water temperature and thickness. Where does this product fall short and why the three-star review? Temperature accuracy!!! My HydroPro Plus could never get to and maintain the set temperature. The machine would beep letting me know the water temperature was reached, but the temperature was never reached when I look at the current temperature displayed on the manual temperature entry screen (the main screen stops displaying the actual current temperature after the set temperature is reached). For an example, if I set my water temperature to 55 degrees Celsius, the current temperature was typically 54.9 with a few split-second peaks to 55.0 and 55.1 (based on the "laser trimmed sensor" reading on the HydroPro Plus). I recently purchased a reference thermometer with a PT100 RTD probe that included a 5-point UKAS certificate. My reference thermometer showed the water bath temperature was 54.82 when the HydroPro Plus thought the current temperature was 55.1. For the record, my 10+ year old PolyScience 7306 matches my reference thermometer spot on (see the picture). I reached out to Breville support, and that was a waste of my time. David P. said "…each unit is operating to spec…" and the "HydroPro uses a laser-trimmed sensor that’s benchmarked to NIST-traceable reference accurate to a thousandth of a degree." Other areas that could use improving: (1) The clamp works well on Cambro style containers, but the machine can easily tilt on containers without a thick lid. (2) The tilt sensor is too sensitive, which causes the machine to shut off (3) After the water reaches the set temperature, the screen stops displaying the current temperature (4) Breville support. Maybe I got a bad machine? Maybe I received a machine with old firmware? I returned my HydroPro plus... I Hope the next model can beat my 7306!
