Q: Killerspin Jet-600 VS STIGA Pro Carbon, which one is better? Are they both for professionals?

Killerspin is on the lighter side , since it only has 5 plies. I own both paddles, but have used Stiga for only 2 days, and I have noticed that Stiga is a bit harder to control. If you like light weight paddles, go with Killerspin 600. Both paddles have good spins and speeds.

Q: Is this paddle supposed to come with a protective plastic on the rubber? Mine came naked with a few fingerprints on the rubber, should I return it?

The box shouldn't have cellophane but the rubber on the paddle should have a protective layer of plastic on each side. I don't know if you should return it but if it was claimed to be new then it definitely isn't. There is a lot of counterfeiting with bats but if it came in the box shown and feels good to you then I'd say keep it.

Q: What does manufacturer recommended age means? the ageof the person or the amount of time the person have played?

I'm not sure where on the package you see this statement. I would imagine because they consider this a competition paddle and not a recreational paddle.
